Did you know that cooking tomatoes enhances their antioxidant activity? This happens because during the cooking process the walls of the tomato cells are broken down, making lycopene more accessible and increasing its bioavailability. Lycopene is the most efficient biological carotenoid and helps protect our cells against the unwanted effects of free radicals. So start chopping some ripe tomatoes and prepare this delicious lycopene-rich tomato sauce to give yourself a youth boost!
