Zucchini Noodles With Basil Pesto Recipe

+ 2 garlic cloves, thinly sliced
+ 1 tbsp olive oil
+ 1 cup spinach leaves
+ 1/2 cup sliced cherry tomatoes
+ 2 tbsp feta cheese, crumbled
+ 2 tbsp homemade pesto sauce
+ sea salt and pepper to taste
Use a vegetable peeler to cut the zucchinis into long, thin strips, discard the seeds and then slice each zucchini strip lengthwise into smaller strips resembling spaghetti. Heat olive oil in a skillet over medium heat, add the garlic and the zucchini and let cook 3-4 minutes, stirring constantly. Add the spinach, cherry tomatoes, season with salt and pepper and let cook for one more minute. Serve with feta cheese and homemade pesto sauce. Enjoy!
