Crispy Crunchy Melt-in-Your-Mouth Coconut Almond Cookies Recipe
Prep Time: 5 min | Cook Time: 10 min | Yields: 10 cookies
+ 1/3 cup coconut sugar
+ 1/2 cup shredded coconut, unsweetened
+ 1/2 cup almond flour
+ 4 tbsp melted ghee
+ 1 tsp finely grated lemon zest
Preheat oven to 350°F (180°C). In a small bowl, whisk together almond flour, shredded coconut, and lemon zest. In a medium bowl, beat melted butter and coconut sugar until light and fluffy, and then mix in flour mixture.
Drop the dough by tablespoons, 1 inch apart, onto one baking sheet and bake for 10 minutes until golden. Let cool for 2 minutes on the baking sheet, and then transfer cookies to a wire rack to cool completely. Enjoy!
